Home fried potatoes, sausage, onion, and green pepper make up this hearty all-in-one skillet breakfast.
Ingredients
- 1 pound Bob Evans Original Recipe Sausage Roll
- 1 package Bob Evans Home Fries (20oz)
- 1 small onion, diced
- 1 small green pepper, diced
- 4 tablespoons margarine
- 1/2 cup grated cheddar cheese
Directions
In skillet, crumble and cook sausage with onions and peppers over medium heat until browned. Remove from skillet. In same skillet, melt margarine and cook potatoes according to package directions. Stir in sausage mixture and cook until hot. Top with cheese and serve.

I made this as the recipe states. I did rinse the brocolli in a colander and chopped up the bigger pieces before adding it to the casserole. Once we tasted this dish we felt that it needed eggs. I DO NOT like baked eggs so I fried an egg, sunny side up and placed it on top of this casserole in individual bowls ( One egg per serving). It was very good with the egg added and also would be good without the egg for maybe a side dish at dinnertime.
