Country Sausage Macaroni & Cheese

This flavorful mac & cheese recipe is hearty enough for a main dish!
Ingredients
- 1 pound Bob Evans Original Recipe Sausage Roll OR
- 1 pound Bob Evans Zesty Hot Sausage Roll
- 2 packages Bob Evans Macaroni and Cheese (20 oz)
- 1 can sliced mushrooms, drained (4.5 oz)
- 1 cup diced tomatoes
- 1/3 cup sliced green onions
- 2 tablespoons grated Parmesan cheese
Directions
Preheat oven to 350F. In large skillet, crumble and cook sausage until browned. In large bowl, combine sausage, macaroni and cheese, mushrooms, tomatoes, and green onions. Spoon into greased 2-quart casserole dish. Cover and bake 30 minutes or until hot. Stir, sprinkle with Parmesan cheese. Bake, uncovered, 5 minutes more. Let stand for 10 minutes before serving.

I used the sausage, 2 things of mac and cheese, 1 cup of salsa and 1 cup of shredded cheddar mixed together, then I sprinkled shredded cheddar cheese on top. I cooked it like the directions above and the kids and I loved it. It was very moist and reminded me of the sausage and cheese dip that you make around the holidays.
