Easy Sausage Stuffing

This is a great recipe for stuffing. Delicious enough for Thanksgiving, but easy enough for any day of the week.
Ingredients
- 1 pound Bob Evans Savory Sage or Original Recipe Sausage Roll
- 1 large onion, diced
- 3 stalks celery, diced
- 1 (14 ounce) package cubed stuffing
- 1 teaspoon poultry seasoning
- 2 1/2 cups chicken broth
- 1/2 cup melted butter
Directions
In a large skillet over medium heat, crumble sausage. Add onion and celery and cook, stirring occasionally until sausage is brown. In a large bowl, place cubed stuffing. Add sausage mixture. Sprinkle with poultry seasoning. Pour broth and butter over the top and toss to combine. Spoon mixture into a 9 x 13 inch baking dish; cover. Bake at 350F for 45 minutes.

I just came-across this recipe, but actually, I've been making this stuffing for years.
A couple suggestions: 1) since the stuffing cubes generally are seasoned, I don't add poultry seasoning and I use the original recipe sausage; and 2) I add one cubed Granny Smith Apple (unpeeled) at the final mixing stage. The apple really holds-up well in the cooking process, and adds a little sweetness & some tartness -- have received many compliments on this stuffing.
Optional: for a little more color and holiday flavor, try adding 1/2 cup of fresh cranberries with the apples.

I love this stuffing recipe... almost like the stuffing my mom used to make on thanksgiving when i was a kid.... i make it every chance i get using my own little variations... ( i add a few chopped hard boiled eggs ) yummy!
