Bob Evans Hash Browns on the bottom, our Sausage Links on top and a seasoned egg mixture in between.
Ingredients
- 1 package Bob Evans Refrigerated Hash Brown Potatoes (20 oz)
- 1 package Bob Evans Original Sausage Links uncooked (12 oz)
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 10 large eggs
- 3/4 cup milk
- 1/2 teaspoon baking powder
- 1/2 cup diced onion
- 1/4 teaspoon parsley, chopped
- 2 cups shredded Colby Jack or Mild Cheddar cheese
Directions
Preheat oven to 375F. Grease the bottom and sides of a 13 x 9 inch pan with vegetable oil. In a bowl, add hash browns and vegetable oil. Mix until potatoes are evenly coated. Press potatoes into bottom and up sides of pan. Put into center of oven and bake for 20-25 minutes or until browned. Remove from oven and set aside. In a mixing bowl, whisk together eggs, milk, baking powder, salt and pepper. Add diced onion and mix. Pour egg mixture over pre-baked potatoes. Place two rows of sausage links on top egg mixture down the length of the pan. Cover and place in oven. Bake for 30-35 minutes or until center is firm. Remove from oven, uncover. Top with cheese and parsley. Return to oven uncovered and bake an additional 5-10 minutes or until cheese is melted. Remove from oven; allow to set 5-10 minutes before serving.

This breakfast casserole is delicious! The first time I made it, I used the link sausage. We loved it, but we didn't get a bite of sausage in every bite. Now when I make it, I use the roll sausage. And because not every member of my family likes sausage, I make one half with sausage and the other half with bacon pieces. I also add green pepper. Here's the best past...it warms up perfect! A few minutes in the microwave, and it tastes like it came out of the oven. Trust me, you will be very glad that you made it...and so will your family. ENJOY!!!

This is my "go to" breakfast for Christmas morning. I get everything ready the night before. I cook the hash browns in a 9x13 pan. Mix up my eggs and other ingredence in a bowl. When hash browns are done I cover then separately from eggs and refrigerate overnight. This speeds things up in the fast paced morning. I wake up put it all together and bake. It bakes while I get ready with no fuss. I pack it up and take it to my daughter's house for breakfast. My family ask me to make it every year. Everyone loves it!

This is our absolute favorite egg casserole recipe! Although it takes a little time to prepare (I like to cook and brown the sausage first), it's very easy to make, and it tastes delicious! This is a scrumptious contribution to brunches and family gatherings, but also, a great-tasting dinner during the work week!
