This easy breakfast is a great way to start the day. Sausage, eggs and cheese are layered over a crescent roll base for a delicious and filling meal.
Ingredients
- 1 pound Bob Evans Original Recipe Sausage Roll
- 2 cups shredded mozzarella cheese
- 1 can refrigerated crescent dinner rolls (8 oz)
- 4 large eggs, beaten
- 3/4 cup milk
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Directions
Preheat oven to 425F. Crumble and cook sausage in skillet over medium heat until browned. Drain sausage. Line bottom of greased 13 x 9 inch baking dish with crescent roll dough, firmly pressing perforations to seal. Sprinkle with sausage and cheese. Combine remaining ingredients in medium bowl until blended, pour over sausage. Bake 15 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.

My husband and Father-In-Law couldn't stop talking about how yummy the Weekend Brunch Casserole was! It was super easy to make and very satisfying! I will definitely make it again soon. I made this for a Christmas brunch used turkey sausage since one of my coworkers does not eat pork. Added onions and mushrooms. Will make again but may use a mix of cheeses just to change it up. Is extremely easy and very very good!!!!

Although it is labeled "Brunch", it serves nicely as Supper, too. I generally use the Bob Evans Sage sausage roll. It smells great while baking and is so easy to put together, even on a busy day. Oh yes, you can extend the servings by using 5 or 6 eggs. (Make sure the eggs are seasoned well before pouring over the sausage.)

I love this casserole on many levels. It is 'simplicity' in itself. The list of ingredients is short and not exotic or too spicy. It is another unique way to employ Crescent Dough. Bob Evans Sausage give such a good flavor to a casserole without adding a highly greasy side-effect. There are 8 full-sized portions &/or 16+ for 'samplers'. Would be fantastic to serve as a mini-kiddies breakfast treat, or sleepover snack. Will give a fresh fruit salad a great highlight as an accompaniment. This goes into my 'Favorites' Recipe Box!
