The classic flavors of a Reuben sandwich -- corned beef, sauerkraut, Swiss cheese -- baked in a casserole.
- 1 package
- 2 large eggs
- 1/4 cup milk
- 1/3 pound thickly sliced corned beef cut into 1/2 inch pieces (available at grocery deli)
- 1 can sauerkraut, drained (14 oz)
- 1 tablespoon spicy brown mustard
- 1 cup shredded Swiss cheese, divided
Preheat oven to 400F. In large bowl, stir together potatoes, eggs and milk until well combined. Stir in corned beef, sauerkraut and mustard. Set aside 2 tablespoons of cheese. Stir in remaining cheese into potato mixture. Pour into a greased 8 x 8 inch oval baking pan. Top with 2 tablespoons cheese. Bake 15-20 minutes or until top is golden.

I made this casserole tonight based on all the glowing reviews. To say the least, I was very disappointed. Indeed, not a member of my family (of which there are five) enjoyed this meal. The sauerkraut flavor overwhelms and the texture is nothing but mush. Also, since when does a Reuben lack thousand island dressing? To summarize, while this casserole is not offensive in taste and is easy to prepare, it is not nearly as good as other reviews would lead you to believe. I won't be making this again.

This was a awesome recipe. I used the left-overs from our St. Patty's Day meal. I used a little more corned beef, 1/2 pound of Corned Beef and changed the Mustard to 1 Tablespoon of Coleman'a English Mustard. I will use this recipe again. Thanks Bob Evans
