Baked Apple Pancake

Share this large, fluffy apple-filled pancake with the ones you love!
Ingredients
- 1 package Bob Evans Sliced Glazed Apples (20 oz)
- 3 tablespoons butter
- 4 large eggs
- 1 cup milk
- 1 teaspoon lemon zest
- 1 cup flour
- 1/4 cup sugar
- Confectioner's sugar (optional)
Directions
Preheat oven to 425F. Place butter in a 10-inch cast iron skillet, place skillet in oven to melt butter. In large bowl whisk eggs, milk and lemon zest until frothy. Add flour and sugar, whisking until smooth. When skillet is hot and butter is melted remove from oven and carefully add batter, then spoon apples on top. Immediately put skillet back in oven. Bake for 18 to 20 minutes or until puffed and brown. Serve dusted with confectioner's sugar, if desired.

Baked Apple Pancake

This is a very easy and delicious recipe. It took a short amount of time to prepare, and can even be made by cooking your own apple which is what I did. The flavor was simple not to overbearing on the pallet. The cake was light and sweet. I recommend this to a person who want a nice sweet breakfast item. It goes great too with ice cream as a dessert.
10" Pan too small

Need to use a 12-14" skillet for this volume of food. The problem is the Apples are extremely moist (they should be allowed to drain for an hour or two) and the panckacke does not cook through, even with extra time alloted. Will not try again - it was like an apple quieche, with a burnt bottom, disappointing.
