Stuffed Baked Squash

Ingredients
- 1 pound Bob Evans Original Recipe Sausage Roll
- 1 cup onion, diced
- 1/3 cup celery, diced
- 5 medium yellow squash or zucchini
- 1 box stuffing mix (6 oz)
- 1 3/4 cups cup water
- Salt & black pepper to taste
Directions
Preheat oven to 350F. In large skillet, cook and crumble sausage until brown. Add onion and celery and cook until tender. Meanwhile, cut squash in half lengthwise and scoop out seeds, leaving 1/4 inch shell. Place in large baking dish and sprinkle with salt and pepper. When sausage is brown, remove from heat and stir in stuffing and water. Stuff each squash half with sausage mixture. Cover pan and bake 20 minutes. Uncover and bake an additional 10 to 20 minutes or until squash is tender and stuffing is browned.

Great & quick appetizer!

I doubled this recipe because we were having company and needed snacks for a big football weekend! I make it several hours ahead & popped it in the oven 1/2 hour before serving. Great taste, moist and semi-healthy! The only drawback was it is a messy snack but no-one complained. Thanks for the recipe!!!
