Sausage & Cheese Omelet Bake

This filling breakfast pairs well with fresh fruit and is so versatile, you can serve it for brunch.
Ingredients
- 1 package Bob Evans Sausage Patties OR Original Sausage Links (12 oz)
- 12 slices peasant, honey wheat or multigrain bread, crusts removed, lightly toasted
- 1 package frozen chopped broccoli, thawed, drained (10 oz)
- 1/2 cup onion, chopped
- 2 cups shredded Shredded Sharp Cheddar Cheese (8 oz)
- 6 large eggs
- 1/4 teaspoon salt and pepper
- 3 cups milk
Directions
Cook sausage according to package directions; drain on paper towel. Cut sausage into bite-size pieces; set aside. Place 6 of the bread slices in bottom of greased 9 x 13 inch baking pan. Top with layers of half each of the sausage, broccoli, onion and cheese. Repeat layers of sausage, broccoli and onion. Beat eggs and seasonings in medium bowl with wire whisk until well blended. Gradually add milk, beating well after each addition. Pour over ingredients in baking pan; cover. Refrigerate at least 3 hours or overnight. Preheat oven to 350F. Bake, uncovered, 45 minutes. Top with remaining 1 cup shredded cheese; bake an additional 15 minutes or until center is set and cheese is melted. Let stand 10 minutes before cutting to serve.

We leave out the broccoli, my husband doesn't like it, and use Texas Toast croutons. Quick, easy, and there is never any left !
