Mini Sausage Pizzas

Let kids pick their own toppings for these mini pizzas, or serve them up as an appetizer at your next get-together.
Ingredients
- 1 pound Bob Evans Italian Sausage Roll
- 6 mini Kaiser rolls (3-inch diameter)
- 3/4 cup prepared marinara sauce
- 1 package frozen chopped spinach, thawed, well drained (10 oz)
- 2 tablespoons Parmesan cheese, grated
- 1 1/4 cups Shredded Mozzarella Cheese, divided
Directions
Preheat oven to 375F. Split rolls horizontally in half. Scoop out insides, leaving 1/2-inch thick shell; set aside. Cook sausage in large skillet on medium-high heat until browned and crumbled; drain well. Add marinara sauce, spinach, Parmesan cheese and 1/2 cup of the shredded Mozzarella; mix well. Spoon 1/4 cup sausage mixture into each hollowed out roll. Sprinkle each with 1 tablespoon shredded Mozzarella. Place on baking sheet. Bake 12 to 15 minutes or until cheese is melted.

Instead of Kaiser rolls, i use english muffins their little wells hold the pizza sauce in.
