Lentil Soup

Sausage, onions, carrots and celery are combined with lentils to make a hearty soup.
Ingredients
- 1 pound Bob Evans Zesty Hot or Italian Sausage Roll
- 1 medium onion, chopped
- 1 medium carrot, finely chopped
- 1 stalk celery, finely chopped
- 2 tablespoons garlic, minced
- 2 cups dried lentils
- 2 whole bay leaves
- 12 cups chicken broth or bouillon
- Salt & black pepper to taste
Directions
Crumble sausage in 4-quart saucepan; cook over medium-high heat until browned, stirring occasionally. Remove sausage to medium bowl; cover and refrigerate. Add onion, carrot, celery and garlic to drippings; cook and stir until tender. Stir in lentils, bay leaves and chicken broth. Bring to a boil. Reduce heat to low; simmer 20 minutes or until lentils are tender. Add reserved sausage; season with salt and pepper. Cook until sausage is heated through. Remove and discard bay leaves. Serve hot. Refrigerate leftovers.

The lentil soup has excellent fresh flavor with a bit of zest. The consistancy is great and a bowl of the soup is filling! Easy to prepare and I will prepare again.
