Sunrise Squares

This colorful breakfast is a great way to entertain out of town guests. Just make it the day before, or take it to go by placing squares between the halves of toasted English muffins.
Ingredients
- 1 pound Bob Evans Original Recipe Sausage Roll
- 6 slices bread, cut into 1/2 inch cubes
- 3/4 cup diced green and red peppers
- 1 cup shredded sharp Cheddar cheese
- 6 large eggs
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
Directions
Preheat oven to 350F. Crumble and cook sausage in medium skillet over medium heat until browned. Drain sausage. Spread bread cubes in greased 9 x 13 inch baking dish; top with sausage, peppers and cheese. Whisk eggs, milk, salt and mustard until well blended; pour over cheese. Bake 30 to 35 minutes or until set. Let stand 5 minutes before cutting into squares; serve hot. Refrigerate leftovers.

Love that you don't have to soak the bread overnight like most recipes of this type. I had already made Bob Evans Thick Sliced Pepper Bacon, so I omitted the sausage from this recipe. Next time I will make it with the sausage. I would cook it for at least 35 minutes--the best parts were around the edges where the bread got crunchy. I used whole grain wheat bread and it was a delicious healthy breakfast.
